In Trás-os-Montes, winter is the season for cozido (a traditional stew) and smoked meats. New producers are reinventing old recipes.
From 22 to 25 January, Montalegre, in Trás-os-Montes, becomes the 'Queen of Smoked Meats'. Alongside the town's famous annual fair, the Cozido à Barrosã — a traditional Barrosã stew — is the star of local restaurant menus. The celebrations at the table continue until Carnival.

For more than 30 years she has been producing smoked meats in Aldeia Nova do Barroso, in Montalegre. Joaquina Costa spends much of her time in the kitchen, a kitchen typical of Trás-os-Montes, and is helped by her husband, who looks after the animals.
